Sur le vin au Moyen Âge Wine Jean-Louis Gaulin The fourth section of Liber Ruralium commodorum, work written in the early fourteenth century by the Bolognese Pietro de 'Crescenzi, is a good gateway to the techniques of medieval winemaking. The use of this text, however, requires recognition the various strata that compose it, and, in particular, the identification of numerous borrowings from the Liber de Crescenzi vindemiis. This short treatise originates translation by Burgundio Pisa, part of the Byzantine Géoponiques Cassianus Bassus (sixth-VIP centuries). Crescenzi has updated and extended this basic text with the description of gestures and vini-technical schools practiced in Italy in the thirteenth and fourteenth centuries racking, topping, collage and wine medicine.
